Prickly Pear Syrup

  • Use tongs and Pick the purple / pink prickly pears from the cactus 
  • Put in colander and run under HOT water while shaking in the colander. This helps remove all of the glochids (little hair like thorns) 
  • Cut off each end of the prickly pear and then cut a slit in the skin. 
  • Cut around the skin of the prickly pear to remove the “meat” 
  • Toss in pot and fill with water till the prickly pears are barely covered. (I used 5 cups of water) 
  • Add your desired amount of sugar. (I used 3.5 cups of sugar) 
  • Once it boils, stir and remove from heat
  • Toss in blender and blend it up! 
  • Strain 2-3x 
  • Cool before storing in refrigerator or freeze for up to 6 months

Add this to your favorite cocktails! Works great in margaritas!
