Prickly Pear Syrup
- Use tongs and Pick the purple / pink prickly pears from the cactus
- Put in colander and run under HOT water while shaking in the colander. This helps remove all of the glochids (little hair like thorns)
- Cut off each end of the prickly pear and then cut a slit in the skin.
- Cut around the skin of the prickly pear to remove the “meat”
- Toss in pot and fill with water till the prickly pears are barely covered. (I used 5 cups of water)
- Add your desired amount of sugar. (I used 3.5 cups of sugar)
- Once it boils, stir and remove from heat
- Toss in blender and blend it up!
- Strain 2-3x
- Cool before storing in refrigerator or freeze for up to 6 months
Add this to your favorite cocktails! Works great in margaritas!
